This list is for ingredients that keep for a long time in the pantry or refrigerator and are less likely to be in every household. These are not short-term perishables like fish, meat, eggs, fresh herbs, or fresh vegetables.

The goal is not to build a complicated specialty pantry. The goal is to buy a small number of useful ingredients that make many recipes in this book easier.

A Note on Butter and Olive Oil

These two ingredients appear in nearly every recipe in this book and are treated as staples rather than pantry additions. Keep a good butter (unsalted or salted — both work) and a bottle of honest extra virgin olive oil in your kitchen at all times. They are the fat foundation of the book.
